1. What is the construction of your cookware?

The cookware featured on Heritage Steel Pans is built with a fully-clad, multi-ply construction. This means we use multiple layers of premium metals bonded together to form a single, cohesive sheet. Typically, the core is a thick layer of aluminum, which is an excellent conductor of heat. This core is then completely encapsulated by two outer layers of durable, 18/10 stainless steel.

This 3-ply (or sometimes 5-ply) design extends from the base of the pan all the way up the sides. This is the most crucial aspect of our selection; unlike cheaper cookware that only has an aluminum disc on the bottom, our fully-clad construction ensures that heat is distributed evenly not just on the cooking surface, but also along the sidewalls. This eliminates scorching and ensures that every part of your food cooks at the same rate.

2. Why should I choose stainless steel over non-stick?

Stainless steel offers several advantages that non-stick coatings cannot match. First and foremost is durability. Our stainless steel pans are incredibly resilient; they resist scratching, chipping, and warping, and they are completely safe to use with metal utensils. This means they will last for decades, if not a lifetime.

Second is performance. Stainless steel can handle much higher heat than non-stick, making it ideal for achieving a beautiful, flavorful sear on meats and poultry. It also allows you to create fond—those delicious browned bits stuck to the pan—which are the foundation of incredible pan sauces. 3. Are these pans compatible with induction cooktops?

Yes, absolutely. One of the key benefits of the fully-clad stainless steel construction is its magnetic conductivity. All the cookware featured on Heritage Steel Pans is fully compatible with induction cooktops, as well as gas, electric, ceramic, and halogen stovetops. You can seamlessly use your pans on any cooking surface in your kitchen.

4. How do I cook with stainless steel without food sticking?

This is one of the most common questions, and the answer lies in a technique called the “Leidenfrost effect.” To prevent sticking, you need to preheat your Heritage Steel Pan properly. Place the pan on medium heat for about two to three minutes. To test if it’s ready, sprinkle a few drops of water into the pan. If the water sizzles and forms into a single, dancing bead that slides across the surface, the pan is at the perfect temperature. At this point, add your cooking oil (like canola or avocado oil) and swirl to coat. The oil will shimmer and become fluid instantly. Then, add your food. The heat will create a temporary steam barrier that prevents the food from bonding to the metal. Remember to let the food develop a crust before trying to flip it; if it sticks, it isn’t ready yet.

5. How do I clean and maintain my pans?

Maintaining the beauty of your cookware is simple. We recommend hand washing with warm, soapy water and a soft sponge or cloth. While our pans are sometimes labeled as dishwasher-safe, we strongly advise against using the dishwasher for regular cleaning, as harsh detergents can eventually dull the exterior finish over many years.

If you notice a rainbow discoloration or a white, chalky residue, don’t be alarmed. This is typically just mineral buildup from water or food proteins. You can easily remove this by gently wiping the pan with a cloth dampened with white vinegar, then rinsing and drying immediately.

6. Can I put these pans in the oven?

Yes. The cookware we feature is highly versatile and oven-safe. Our pans are designed to withstand high temperatures, typically up to 600°F. This allows you to start a dish on the stovetop and finish it in the oven with ease, perfect for recipes that require braising or roasting. The stainless steel handles are engineered to remain comfortable in the oven, making the transition seamless.

7. Are the handles comfortable and secure?

We pay meticulous attention to the ergonomics of our cookware. They are also cool-touch on the stovetop when used properly, as the long design allows them to stay cooler than the pan itself.

8. Will the pans discolor or show water spots?

Over time and with regular use, you may notice a slight patina or some water spots. This is completely normal and does not affect the pan’s performance. To maintain a pristine appearance, we recommend drying your pan immediately after washing. Occasionally, you can use a stainless steel polish or a bit of baking soda to restore the original shine, but this is purely for aesthetics.

9. What materials are used in the rims?

The rims of our pans are fully sealed and made from the same multi-ply stainless steel layers. Because they are sealed, there is no exposed aluminum, which makes them safe for dishwasher use and prevents corrosion. However, as mentioned, hand washing is still our preferred method for long-term care.

10. Is this cookware safe for health?

Absolutely. The 18/10 stainless steel used in our pans is the industry standard for food safety. It is an inert material, meaning it does not react with food or release harmful chemicals, even at very high temperatures. This makes it a safe, healthy, and reliable choice for everyday cooking.
